Recently a workmate of mine celebrated her birthday and the ever so difficult task of shopping for a present began to daunt upon me D: and so instead i decided to make cupcakes!
This was the first time i made these green tea cupcakes and they turned out surprisingly well! They seem child-like cause they are cupcakes but as you bite into them the 'adulty' taste of green tea hits you. And so, i was pretty pleased with them, if i like to say so myself! haha Everyone seemed to enjoy them on the day of the celebration so that was a bonus! lol The most funniest thing (i thought) was when my boss called them healthy... hmmmm i don't think so, but what the heck!
This is pretty easy to make and will work with any buttercake recipe, all you need to do is add some extra green tea (matcha) powder! You can usually find matcha powder in your local asian grocery stores. Probably depends on which brand and where you buy it, but i bought a 50g tin for about 6 bucks... whether that is cheap or expensive, i'll leave that for you to decide! :)
Green Tea Cupcakes with White Chocolate Ganache
90g Butter, softened
1/2 Teaspoon Vanilla Essence
1/2 cup caster sugar
2 eggs
1 cup self raising flour
1/2-1 tablespoon green tea powder
2 tablespoon milk
100g white chocolate, coarsely chopped
2 tablespoons thickened cream
1. Preheat the oven to 180 degrees
2. Beat butter, vanilla, sugar, flour, eggs and milk in a small bowl with an electric mixer on low until combined. Add green tea powder and mix until there is an even green colour throughout the mixture
3. Divide mixture among cases
4. Bake large cakes for about 25mins and small cakes for 20mins (this depends on your oven, so just keep checking the cupcakes whilst cooking!)
5. Turn cakes to wire rack to cool
6. Whilst your cupcakes are cooling make the white chocolate ganache by melting the white chocolate with the thicken cream in a bowl over a water bath
7. Pour ganache onto the cupcakes and then place in the fridge to allow the ganache to set
